The Black Dog welcomes our new chef!


Executive Chef Mark Lowman Black Dog Cafe


Chef Mark was raised in a blue-collar neighborhood in Pittsburgh, PA where his love for food and exploration of flavor was born. His mother, an awarded baker, taught him the importance of trying new things and to appreciate the culture that can be shared through food.

Since moving to Minnesota, Mark has been the Executive Chef of the Marquette Hotel and Chef/Owner of Byte Game Pub. He has cooked for the European Ryder Cup team and for the Charlie Awards.

He’s traveled and cooked all over the world spending time in kitchens in Morocco, Peru and Vietnam. His cuisine is simple and bold, but his travels give it a grounded yet whimsical flare. He understands the importance of technique and tradition, as well as style and innovation.

Mark’s ability to elevate simple, everyday foods fits well with our philosophy. Together, we want the Black Dog to be a place where you will find delicious, approachable, contemporary American food, prepared with care, using fresh, quality ingredients.

Chef Mark has begun to put his stamp on the Black Dog kitchen, and a new menu will roll out mid-April. Among the soon to be “must-have” items are his Nashville Chicken sandwich which has already lured former patrons from Byte to cross the river (no small achievement) for a fix of that sweet heat.

Mark is excited to have the Saint Paul Farmers Market at his doorstep with all the seasonal ingredients and culinary inspiration that affords. Look for the return of the Black Dog’s Pop-Up Chef’s dinners in the event space…Mark is eager to try new ideas and bring in restaurant pros and colleagues for fun and exciting collaborations.

We look forward to this next chapter in the Black Dog story with Chef Mark Lowman leading the kitchen...and with a name like Lowman, Lowertown seems like the place he should be.
